Ingredients

• 1 dragon fruit, peeled and diced
• 2 oz silver tequila
• 1 oz triple sec
• 1 oz fresh lime juice
• 1/2 oz agave syrup
• Ice cubes
• Salt or sugar for rimming the glass (optional)
• Lime wedges and dragon fruit slices for garnish

Instructions

1. Begin by preparing the dragon fruit puree. In a blender, combine the diced dragon fruit with a splash of water and blend until smooth. Strain the puree through a fine mesh sieve to remove any seeds, if desired.
2. Rim the edge of a margarita glass with salt or sugar, if desired. To do this, rub a lime wedge around the rim of the glass, then dip it into a shallow dish of salt or sugar.
3. Fill the rimmed glass with ice cubes.
4. In a cocktail shaker, combine the dragon fruit puree, tequila, triple sec, lime juice, and agave syrup. Fill the shaker with ice cubes and shake vigorously for about 30 seconds to chill the mixture.
5. Strain the margarita into the prepared glass over the ice.
6. Garnish with lime wedges and dragon fruit slices.
