Jackfruit Curry

Ingredients

• 2 cans (20 ounces each) young green jackfruit, drained and rinsed
• 2 tablespoons vegetable oil
• 1 onion, finely chopped
• 3 cloves garlic, minced
• 1 tablespoon fresh ginger, grated
• 2 tomatoes, diced
• 1 can (14 ounces) coconut milk
• 2 tablespoons curry powder
• 1 teaspoon ground turmeric
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1/2 teaspoon cayenne pepper (adjust to taste)
• Salt and pepper to taste
• Fresh cilantro for garnish

Instructions

1. Heat the vegetable oil in a large skillet or pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
2. Add the minced garlic and grated ginger to the skillet, and cook for an additional 2 minutes, stirring frequently.
3. Stir in the diced tomatoes and cook for another 5 minutes, until the tomatoes begin to soften.
4. Add the drained and rinsed jackfruit to the skillet, breaking it up into smaller pieces with a spoon or spatula.
5. In a small bowl, combine the curry powder, ground turmeric, ground cumin, ground coriander, and cayenne pepper. Stir the spice mixture into the skillet, coating the jackfruit and vegetables evenly.
6. Pour in the coconut milk and stir to combine. Bring the mixture to a simmer, then reduce the heat to low and let it simmer gently for 15-20 minutes, stirring occasionally.
7. Taste the curry and season with salt and pepper as needed.
8. Once the jackfruit is tender and the flavors have melded together, remove the skillet from the heat.
9. Serve the jackfruit curry hot, garnished with fresh cilantro leaves.
