Ingredients

• 1 1/2 cups graham cracker crumbs
• 1/4 cup granulated sugar
• 6 tablespoons unsalted butter, melted
• 4 large egg yolks
• 1 can (14 ounces) sweetened condensed milk
• 1/2 cup Persian lime juice
• 1 tablespoon Persian lime zest
• Whipped cream and lime slices for garnish (optional)

Instructions

1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
3. Press the crumb mixture into the bottom and up the sides of a 9-inch pie dish, forming an even crust.
4. Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden brown. Remove from the oven and set aside to cool.
5. In a separate mixing bowl, whisk together the egg yolks, sweetened condensed milk, Persian lime juice, and Persian lime zest until well combined.
6. Pour the lime filling into the cooled graham cracker crust.
7. Return the pie to the oven and bake for an additional 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
8. Remove the pie from the oven and allow it to cool to room temperature. Then, refrigerate for at least 4 hours, or until fully chilled and set.
